北港青蛙湯熱賣 入口「頭皮發麻」

【林靜盛╱雲林報導】吃過一整隻、躺在水裡的青蛙嗎?初見者或許需要很大勇氣,才咬得下口。北港鎮有好幾家賣青蛙湯的店,尤以圓環旁店家「紅燒青蛙湯」最出名,不管清燉還是紅燒,端湯上桌時,兩隻青蛙躺在湯裡的模樣,就是一場視覺震撼。


肉質比雞肉Q彈

北港人叫青蛙湯為「四腳仔湯」,裹粉炸過的紅燒版是重口味,賣相較不駭人;在地人偏好清湯版、整隻蛙清水燙過,加薑絲、九層塔提味,「蛙味」十足,口感介於雞肉和魚肉,老顧客視為極品,但外地客卻不這麼想,如觀光客張華玲就說:「『四腳仔』指蹼全露在湯外,讓人頭皮發麻!」
在醫院工作的王思雅聽說青蛙湯富含膠原蛋白,為養顏美容,三不五時就來吃一碗,她讚肉質比雞肉Q彈,不過「只敢吃蛙腿!其餘部位淺嘗。」老顧客廖健甫則建議初試者:「每咬一口都配點湯,美味再加分。」
圓環青蛙湯現由第二代經營,為求新鮮,每天一早要處理400多隻本土種虎皮蛙,去頭、去內臟。老闆黃保順說:「本土種肉質紮實香氣濃郁,改良種成本雖便宜,但肉質鬆軟,不對味啦!」
